Main Street Mercantile provides individually tracked deer processing with vacuum-sealed, labeled packages, specialty products, and frozen shipping options for hunters who cannot stay in Kansas until their order is finished.
A $100 deposit is required for each deer when it is dropped off. You may pay by credit or debit card through our secure payment page, by Venmo at @msmks, or inside Main Street Mercantile during regular business hours.
The deposit is credited toward your final invoice. Final processing charges, specialty products, added pork fat, shipping, and applicable sales tax are calculated on the final invoice.

Whole field-dressed deer — $200 per deer
Customer-supplied clean boneless trim — $1 per pound of accepted incoming trim
A $100 deposit is due when each deer is dropped off. The deposit is applied to the final invoice.
All finished products are custom-exempt household-use products and are labeled “Not for Sale.”
We accept clean, boneless, current-season venison brought in sealed, food-safe bags.
Boneless trim must be:
• Completely boneless
• Clean and free of dirt, hair, leaves, gut contents, and other contamination
• Sealed in food-safe bags
• Clearly labeled with the customer’s name and carcass/tag number
• Chilled or frozen when delivered
We do not accept deer quarters, bone-in pieces, loose exposed meat, dirty trim, or improperly packaged meat.
All customer-supplied trim is inspected when received. Meat that does not meet these requirements may be refused.
Boneless trim is billed at $1 per pound based on the accepted incoming weight. Added pork fat is $3 per pound.
Our standard cut includes a practical mix of:
• Backstraps
• Tenderloins
• Steaks
• Roasts
• Burger
Fresh-cut choices may include steak thickness, package size, backstrap preparation, round preparation, roast preferences, and whole-muscle jerky.
We work with the actual size and condition of each deer. Roast sizes, trim amounts, and final yields vary. Bloodshot meat, bone fragments, contamination, gut-shot damage, and other unsuitable tissue are discarded.
Burger is packaged in one-pound packages.
Our standard burger option includes 15% pork fat. Added pork fat is billed at $3 per pound of fat added.
If you want a different fat percentage or blend, describe it in the intake form’s special instructions. We will contact you if clarification or additional pricing is needed.
Specialty products are filled in approximately 10-pound venison batches. We will not know exactly how much usable trim your deer produces until it is cut.
You may rank your preferred products in the intake form. We fill those choices in order of priority. If there is not enough usable trim for the next product, the remaining trim becomes burger.
Each product or flavor generally requires approximately 10 pounds of usable venison. Very small custom batches are not practical.
